Guacamole Without Onion

Ingredients
  

  • 4 Large Avocados
  • 1/2 Cup Fresh Coriander Leaves
  • 1 clove Garlic
  • 1 tsp Flaked Sea Salt optional
  • 2 tbsp Fresh Lime Juice

Instructions
 

  • Take the coriander leaves, garlic and salt and using a pestle and mortar, pound together to make a paste. Set aside.
  • Cut the avocados in half and remove the stones.
  • Scoop out the flesh into a bowl and mash until you have your desired consistency. You can make it as chunky or smooth as you wish.
  • Add the paste and stir through.
  • Squeeze the lime juice in with the rest of the ingredients and stir to mix everything together.
  • Cover immediately until you are ready to serve.

  • Cover the guacamole immediately to prevent it from turning brown. 
  • Save the coriander stalks for another recipe. 
  • You can use a blender in place of a pestle and mortar to make the paste, just add some of the lime juice. 
  • Only use ripened avocados.
  • Squeeze the lime juice from limes that are at room temperature.
