White Chocolate Biscoff Rocky Road
White chocolate Biscoff rocky road is the perfect no bake tray bake recipe, designed to please the whole family. When you need a super easy, quick recipe to take to a party, an easy rocky road tray bake is just the thing.
300 g White Chocolate 100 g Smooth Lotus Biscoff Spread plus extra for drizzling 50 g Unsalted Butter 60 g Mini Marshmallows 200 g Lotus Biscoff Biscuits 100 g White Chocolate Smarties
Line and grease a 20cm baking tin with a little butter. Place the chocolate, spread and butter in a pan and melt over a low heat, stirring continuously Roughly break the biscuits into small pieces and set aside. Allow the melted mixture to cool slightly. Add the marshmallows, broken biscuits and smarties to the mixture and stir through so that the ingredients are distributed evenly. Pour the mixture into the prepared baking tin and spread it out evenly. Press the mixture down firmly in the tin. Heat some extra Biscoff spread in 10 second increments in the microwave and drizzle over the top of the rocky road. Place the tin in the fridge to set for 1 hour. Remove the rocky road from the tin and cut into bars ready to serve.

Press the mixture down firmly into the tin to prevent crumbling.
Wait until the chocolate mixture has cooled slightly before mixing in the rest of the ingredients to prevent anything melting.
