Nut Roast

  • 225 g Chopped Mixed Nuts
  • 225 g Wholemeal Breadcrumbs
  • 100 g Chopped Onion
  • 2 Eggs
  • 2 Cloves Garlic
  • 2 tsp Marmite
  • 100 g Cheddar Cheese
  • 1 tsp Fresh Chopped Parsley
  • 1 tsp Fresh Chopped Thyme
  • Salt and Pepper to taste


  • Preheat oven to 180C.
  • Mix the nuts and breadcrumbns in a bowl.
  • In a frying pan, add a little oil and fry the onion until soft.
  • Once the onion has cooled slightly, add it to the nut mixture.
  • Place the eggs in a separate bowl and beat slightly.
  • Add the marmite, cheese and herbs to the eggs and mix. Season with salt and pepper.
  • Pour the egg mixture in with the dry ingredients and mix.
  • Shape the mixture into a log and place on a baking tray.
  • Roast in the oven for 30-45 minutes until it turns a deep brown.
  • Remove from the oven, allow to rest for 10 minutes and then serve.
