Lemony Roast Chicken

  1. Mix the oil, lemon zest and juice, garlic, pepper and sage in a bowl.
  2. Pour over the chicken and place the rest of the whole lemon inside the chicken.
  3. Soften the butter and spread over the chicken.
  4. Place in a preheated oven for 20 minutes per 500g plus an extra 20 minutes.
  5. Once cooked, remove from the oven and cover with foil. Allow to rest before serving.
