It’s feeling colder, and darker and much more like winter today. Time to whip out some comforting recipes to brighten up your day just a little.
Yesterday, Bam Bam decided to polish off an entire bag of donuts in less than 5 minutes whilst I laid his brother down for a nap. I have to admire him for grabbing an opportunity with both hands….and filling them with donuts!
As you can imagine he spent the afternoon on a total jammy, sugary high and then promptly fell fast asleep an hour before he usually does. There is always a silver lining!
Make Your Own Soda Bread
With the boys at nursery, and having some me time. I spent my morning with Bruce and Twiggy. What better way to spend some free time!
Garlic and Rosemary make such a good pair! And with this quick bread you can serve it up in under an hour. Perfect for supper with a bowl of soup on a cold evening.
Mix your garlic and butter together
In a separate bowl, mix the flour, bicarb and salt together and then add the buttermilk and garlic butter. Mix to form a dough.
Add the rosemary and mix in.
Shape the dough into a ball and cut a cross about 3/4 of the way through it. Place it on a baking tray and into a preheated oven at 180 oc for 25 minutes.

Rosemary & Garlic Soda Bread
Ingredients:
30g Butter
2 Cloves of Garlic
250g Plain Flour
1
1 Tsp Bicarbonate Of Soda
1 tsp Fresh Rosemary
200ml Buttermilk
Directions:
- Preheat oven to 180 oc
- Crush the garlic and mix in with the butter
- In a separate bowl, mix the flour, bicarbonate of soda and salt
- Add the garlic butter and buttermilk and mix until you form a dough
- Mix in the rosemary
- Shape into a ball and cut a cross 3/4 deep into the dough and place on a baking tray
- Bake for 25 minutes until browned
