Meatballs in a Spicy Tomato and Pepper Sauce

We have a heat wave!!! I spent most of the day trying to cool down and I am sure I don’t need to tell you how hot it is right now! I am really trying not to be typically British and bemoan the weather in whatever form it chooses to take. But truth be told that we never seem to be prepared for any kind of weather in the UK. I was especially unprepared when I realised my AC in the car has run out of gas! Cue me driving to the supermarket with every window down and positioning my elbow so I could feel a cool breeze on, at least, some part of my body.

Luckily for me, the kind mobile air conditioning man popped over and refilled it for me in the afternoon and I am finding myself already trying to think of excuses to drive around and make the most of it.

Usually, when it’s this hot, I gravitate towards salads and such but instead I chose to heat things up to match the weather and go for something spicy.  This meal hits the right spot for sure!

1Roughly chop the tomatoes, peppers and celery and place them in a pan. Add all the other ingredients and simmer over a low heat. Mash everything together and cook until the sauce had reduced and starts to thicken.

Strain the sauce through a sieve and place to one side.

Next, take all the meatball ingredients and put them into one bowl.

Squish the meatball ingredients together with your hands until everything is fully combined.

Flour your hands, take some of the meat and form into balls. You can go for big or small ones, whatever you prefer. Just remember the small ones won’t need as long to cook so are preferable if you want something quick.

Heat some oil in a pan and add the meatballs, cook on every side evenly over a low heat until they are cooked through. Once they are ready, drain the oil from the pan and add your sauce and heat through.

Serve over spaghetti with some grated parmesan.

    For the Sauce

    • 1kg Fresh Tomatoes
    • 220g Red Peppers
    • 60g Celery
    • 2 Tbsp White Wine Vinegar
    • Generous Splash of Worcestershire Sauce
    • 2 Tbsp Sugar
    • 1/2 Tsp Salt
    • 1/2 Tsp Garlic Granules
    • 1/4 Tsp Cayenne Pepper
    • 1/2 Tsp Black Pepper
    • 1/2 Tsp Paprika

    For the Meatballs

    • 400g Beef Mince
    • 1/4 Tsp Black Pepper
    • 1 Garlic Clove, Crushed
    • 1 Onion, Finely Chopped
    • 1 Tbsp Fresh Parsley, Chopped
    • 1 Egg

    Directions:
