Whilst I am not a fan of fast food, I have been known to demolish a sneaky drive thru’ meal when feeling really hungry and I always immediately regret it afterwards.
But I really do love burger evenings! And I completely love this burger!
I love spicy, but certain members of my family aren’t so keen, so this it the perfect ratio between the two. Just enough spice to satisfy me and at the same time they will love it too.
Simple, quick, freezable and totally yummy!
4 Slices of Wholemeal Bread
1 Tbsp Paprika
1 Tbsp Ground Cumin
1 Tbsp Ground Coriander
2 Chicken Breasts
1/2 Cup Plain Flour
1 Beaten Egg
Oil to Fry
Place bread and spices into food processor and mix to create spicy breadcrumbs.
Put each chicken breast in a freezer bag and using a rolling pin, flatten the chicken until its approximately 1-2 cm thick. Cut each chicken breast in half.
Place your flour, egg and breadcrumb mix into three separate bowls.
Coat Chicken in the flour, then dip into the egg and lastly, coat with the breadcrumbs.
Heat oil in a pan over a medium heat and fry each burger until cooked through.
The best way to eat
Serve in ciabatta buns with salad, sliced avocado and garlic mayo! Yum!
Once you have assembled the burgers, place flat into freezer bags and use non stick baking paper between each burger, close bag with a clip and place into freezer.
To defrost: Remove from freezer and separate burgers. Place them on a plate, cover and allow to defrost in the fridge before cooking.
