I love cheese! You can improve the worst days with cheese!
My most recent discovery in the cheese aisle is Taleggio. It lives somewhere between Brie and Stilton and is amazing with chicken!
So I thought why not combine the two in a bready, crunchy, crumb heaven?! So simple!
Each Bite needs:
20g pieces of Taleggio cheese, sliced
60g Chicken Breast
2 Slices of Pancetta Bacon
1 Beaten Egg
20g Panko Breadcrumbs
Oil to fry
Flatten each piece of chicken breast to approximately 2cm thick.
Place the slice of Taleggio cheese on top of the chicken and wrap both with the pancetta bacon slices.
Place egg and breadcrumbs into two separate bowls.
Dip the parcel into the beaten egg and then coat with the breadcrumbs until completely covered.
Fry in the oil until cooked through.
Best Way to Eat
Serve with a rocket salad and new potatoes.
